Our pizzas are prepared according to tradition, using two different mother yeasts: one based on home-made flour, the other on wholegrain flour

This flour mix is prepared daily by our pizza chef, who offers you the classical dough as well as a different wholegrain dough every day. We only use organic flour with wheat germ. Thanks to our longer leavening time and our flour, our pizzas are highly digestible.

For our bread we use stone-milled organic flour, with zero miles, mother yeast, natural leavening for an easier digestibility, wild yeasts containing, fruit or cereals to achive unique flavours and fragrances, ancient grains for primordial savours and textures.

For our oil we have chosen a mill growing olives in an uncontamina- ted environment on our hill, surrounding Città Sant’Angelo, one of the most beautiful towns in Abruzzi. Our extra-virgin olive oil is simply far more then just a product, it is a testimony to our tradition.

We inform our customers that the food and drinks served here may contain ingredients or additives considered as allergens. Hereafter the list of the ingredients we use that may cause allergies are: ‘’substances and products causing allergies or intolerances’’ Regulation (EU) 1169/2011
